Filling:
- 6–8 fresh peaches (peeled, sliced) (or ~4 cups canned/drained or frozen/thawed)
- ¾ cup sugar
- ¼ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch
Batter (topping):
- 1 cup all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- ½ cup (1 stick) butter, melted
🥧 Instructions
- Preheat oven to 350°F (175°C).
- Prepare peaches:
- In a bowl, mix peaches, sugars, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch.
- Pour into a greased 9×13 baking dish.
- Make batter:
- In another bowl, whisk flour, sugar, baking powder, and salt.
- Stir in milk until smooth.
- Assemble:
- Pour melted butter evenly over the peaches.
- Pour batter over the top (don’t stir—this creates the cobbler texture).
- Bake:
- Bake for 40–45 minutes, until golden brown and bubbly.
- Cool slightly before serving.
