No-Bake Fruitcake Recipe

Ingredients:

  • 2 cups mixed dried fruit (raisins, cranberries, chopped apricots)
  • 1 cup chopped nuts (optional)
  • 1 cup crushed graham crackers or oatmeal
  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (peanut or sunflower for nut-free)

Instructions:

  1. In a large bowl, mix dried fruit, nuts, and crushed graham crackers (or oatmeal).
  2. In a small saucepan, gently warm honey and nut butter until smooth. Let cool slightly.
  3. Pour the warm mixture over the dry ingredients and stir until fully combined.
  4. Press mixture into a small loaf pan lined with parchment paper.
  5. Refrigerate for at least 2 hours to set.
  6. Slice and enjoy — no baking required!
