No-Bake Fruitcake Recipe
Ingredients:
- 2 cups mixed dried fruit (raisins, cranberries, chopped apricots)
- 1 cup chopped nuts (optional)
- 1 cup crushed graham crackers or oatmeal
- 1/2 cup honey or maple syrup
- 1/2 cup nut butter (peanut or sunflower for nut-free)
Instructions:
- In a large bowl, mix dried fruit, nuts, and crushed graham crackers (or oatmeal).
- In a small saucepan, gently warm honey and nut butter until smooth. Let cool slightly.
- Pour the warm mixture over the dry ingredients and stir until fully combined.
- Press mixture into a small loaf pan lined with parchment paper.
- Refrigerate for at least 2 hours to set.
