  • 3 ripe bananas (the spottier, the better)
  • ½ cup (1 stick) melted butter
  • ¾ cup sugar (adjust to ½ cup for less sweetness)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt
  • 1½ cups all-purpose flour

Optional add-ins:

  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • 1 tsp cinnamon

🍞 Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl until smooth.
  3. Mix wet ingredients:
    • Stir in melted butter.
    • Add sugar, egg, and vanilla. Mix well.
  4. Add dry ingredients:
    • Sprinkle baking soda and salt over the mixture.
    • Stir in flour until just combined (don’t overmix).
  5. Add extras (if using), then pour batter into the loaf pan.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a rack.

  • Use very ripe bananas (almost black skins = more flavor).
