
Ingredients
Dough
- 2 cups all-purpose flour
- ¼ tsp salt
- 2 tbsp vegetable oil or melted butter
- ½ cup warm water
- 1 tsp vinegar or lemon juice
Filling
- 6 apples (Granny Smith or Honeycrisp work well), peeled and thinly sliced
- ¾ cup raisins
- ½ cup sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ½ cup breadcrumbs
- ¼ cup butter
For Finishing
- Melted butter for brushing
- Powdered sugar for dusting
Instructions
1. Make the Dough
- Mix flour and salt.
- Add oil, warm water, and vinegar.
- Knead 8–10 minutes until smooth and elastic.
- Coat lightly with oil, cover, and rest 1 hour.
2. Prepare the Filling
- Toss apples with raisins, sugar, cinnamon, nutmeg, lemon zest, and lemon juice.
- In a skillet, toast breadcrumbs in butter until golden.
3. Stretch the Dough
- Place a clean towel on the counter and dust with flour.
- Roll dough thin, then gently stretch it by hand until almost translucent.
4. Assemble
- Brush dough lightly with melted butter.
- Sprinkle toasted breadcrumbs over the surface.
- Spread apple filling along one side.
- Use the towel to roll the strudel tightly.
5. Bake
- Place seam-side down on a parchment-lined baking sheet.
- Brush with butter.
- Bake at 375°F (190°C) for 35–45 minutes until golden brown.
6. Serve
- Cool slightly and dust with powdered sugar.
- Excellent warm with vanilla ice cream or whipped cream.
